    Melt-in-the-Mouth Veal Shanks

    Serves: 4
    Ingredients
    • 4 French-trimmed veal shanks
    • 1 large (500g) leek, sliced
    • 2 cloves garlic, crushed
    • 2 tbsp chopped sun-dried tomatoes
    • 1 large (180g) carrot, chopped
    • 4 medium (760g) tomatoes, chopped
    • 390g can pimentos, drained, chopped
    • 125ml (1/2 cup) red wine
    • 250ml (1 cup) chicken stock
    • 1 tbsp chopped fresh oregano
    • 1 tbsp baby capers
    Instructions
    1. Combine veal shanks in a large saucepan with remaining ingredients; cover and cook over low heat for 3 to 6 hours or until meat is falling off the bone.
    Notes

    - You MUST cook this recipe for several hours to infuse the flavors… if you taster the liquid too early in the process it will not be very appealing!
    - You may need to top up fluids throughout cooking process
    - This is one of my ALL-TIME *fav* recipes, it is REALLY easy to make and tastes wonderful
    - Serve with mash potatoes or soft polenta
