Melt-in-the-Mouth Veal Shanks Recipe Type: MainServes: 4Ingredients- 4 French-trimmed veal shanks
- 1 large (500g) leek, sliced
- 2 cloves garlic, crushed
- 2 tbsp chopped sun-dried tomatoes
- 1 large (180g) carrot, chopped
- 4 medium (760g) tomatoes, chopped
- 390g can pimentos, drained, chopped
- 125ml (1/2 cup) red wine
- 250ml (1 cup) chicken stock
- 1 tbsp chopped fresh oregano
- 1 tbsp baby capers
Instructions- Combine veal shanks in a large saucepan with remaining ingredients; cover and cook over low heat for 3 to 6 hours or until meat is falling off the bone.
Notes- You MUST cook this recipe for several hours to infuse the flavors… if you taster the liquid too early in the process it will not be very appealing!
- You may need to top up fluids throughout cooking process
- This is one of my ALL-TIME *fav* recipes, it is REALLY easy to make and tastes wonderful
- Serve with mash potatoes or soft polenta
